Chocolate Cake

A family recipe for chocolate cake.


Stage 1

  • 175g margarine or butter
  • 175g sugar

Stage 2

  • 3 eggs
  • Teaspoon vanilla essence (optional)

Stage 3

  • 175g Self raising flour
  • 50g cocoa
  • 1 teaspoon Baking powder


  • 150g of Plain Chocolate Cove
  • 1 desert spoon evaporated milk



  • Prepare oven (190 C).
  • Mix together stage 1
  • Add stage 2: beat eggs well either before by hand or can add slowly in mixer, beating continuously
  • Add in stage 3
  • Line 2 x 18cms/ 7ins tins with baking or greaseproof paper.
  • Grease¬† the paper and sides of tins lightly.
  • Place mixture into tin
  • Oven 190 C for 25 mins
  • Cool in tin -tip onto wire rack.
  • When cool, spread with chocolate spread and sandwich together.


  • Melt 150g of Plain Chocolate Cover in microwave or over pan of hot water.
  • Withdraw from heat and add 1 desert spoon evaporated milk
  • Stir well, allowing to cool until sufficiently cool to stay on cake.
  • Spread on with flat knife.
Topping easier to apply if cake left in fridge for 1 hour or freezer for 15 mins prior to application.
Cake can be frozen for 2 months with choc spread already in place.
